We’ve already written about this season’s successful beetroot crop, so I had no intention of publishing yet another post on this subject. Until this morning.
This morning, when I went to pick a beet for our evening meal, I was presented with a huge surprise. Literally. There it was, right before my eyes: the biggest beetroot I’ve ever seen, reigning proudly in the middle of our vegetable bed at the front of the house.
Of course, it is a complete accident that this beet got to grow so big. We basically didn’t spot it in amongst the others, probably because it didn’t have significantly more foliage than the beets around it. It didn’t stand out. It just hid between its sisters, discreetly, engorging on the rich, nutritious soil and generous sunshine in our front garden.
As you can imagine, we’re glad our champion beetroot managed to escape our harvesting for so long. In actual fact, we’re quite impressed with it and rather proud. Therefore, we decided that it deserves a post of its own before it finds itself at the centre of our kitchen activities this evening.

That beet is so pretty it looks like a work of art.
I know, it was a lovely bright red, which seemed to be enhanced by the light rain that was falling when we took the photo. That didn’t stop us from eating it, though…Very tasty!
so pretty
Thanks, Jo, I thought the same. Vegetables can be beautiful, too, although not many people seem to appreciate their aesthetic qualities. Because we do, we’re labelled as being ‘kind of weird’ in our street.
